The idea for the project arose from the challenge of finding buyers for smaller mushrooms from Knapphaff. Together with On.perfect, the idea of producing antipasti mushrooms was developed. The aim is to preserve easily perishable foods, process non-standard vegetables, use surpluses and avoid food waste.

The project will work on developing efficient workflows and processes that cover all important aspects such as criteria, packaging, pricing, marketing and legal bases. These will serve to develop a processed product that is created in collaboration with various partners.

At the same time, a guide will be created that describes the necessary work steps and product development in detail in order to create a clear structure for future projects. Another goal is to set up a network or contact exchange to promote the further processing of products and enable cooperation between different players.

The aim is to see product development not only as an opportunity to support primary producers, but also as a solidarity project that creates new jobs. In addition, innovative ways of product development and a strong network that promotes exchange and cooperation between those involved should be established.
